We just got home from one of the best vacations ever! Two weeks of fun and sun in Mexico. The first week with just me and the kids and hubby joined for the last week
Eating out while on such a long trip can be so expensive, so we always try to stay at hotels with a kitchen. You’d be surprised at the variety of meals you can come up with around a few basic ingredients like chicken, eggs, beans, avocados, and tortillas. One of our favorites dishes from the trip was this Avocado and Bacon Chicken Salad recipe. It’s so easy to make!
The kids went crazy over it when I served the chicken salad on croissant rolls while the hubby and I usually ate it over lettuce (just mix the chicken salad right into the lettuce- no additional dressing needed.) Other times we served it stuffed into an avocado.
Why is this chicken salad recipe so great?
It’s the addition of the avocado and of course, the BACON! (Bacon makes everything better.)

Ingredients Needed for this Chicken Salad with Avocado and Bacon

- 3 cups diced cooked chicken | We usually use rotisserie chicken for this, but of course, you can use your own cooked chicken. Canned chicken works great too, just give it a rinse first for best flavor.
- Avocados | When looking for avocados to use in this recipe, I recommend a ripe avocado that is not too firm, but not super mushy
- Crispy strips of bacon, crumbled
- Mayo | I do not recommend miracle whip for this chicken salad.
- salt and pepper
How to Make Avocado and Bacon Chicken Salad
It is so easy to make this over-the-top chicken salad!
- Chop up all your ingredients and then combine chicken, avocado, and almost all of the crumbled bacon (reserve a tablespoon or two for garnish.)
- Add mayo and mix until thoroughly combined.
- Add salt and pepper to taste.
That’s it! Easy, peasy.
Recipe Tips:
You can eat the chicken salad right away, but for the best flavor make it 30 minutes ahead to allow time for all the flavors to combine.
Want to dress up your salad even more? A few yummy additions could be a tablespoon of finely chopped cilantro, a few tablespoons of finely diced red onion or even 3/4 cup of fresh corn kernels.
How to Store Leftover Salad:
Place the Avocado and Bacon Chicken Salad in an airtight container. Place plastic wrap on top of the avocado chicken salad and refrigerate. (The plastic wrap will help keep the air out hopefully slow the browning of the avocados.) The avocado will brown a bit over time, but the salad will be delicious for up to 3 days
Serving Suggestions for Avocado and Bacon Chicken Salad:
- As a main course salad over lettuce
- In sandwiches (don’t forget the tomato!)
- In tortilla or lettuce wraps
