In honor of National Egg Month, I wanted to share my favorite protein-filled quick breakfast with you: a 2 Minute Omelette in a Mug.

Seriously, this omelette in a mug recipe only takes 2 to 3 minutes to put together, and the best part is that it is very flexible based on what you have in your fridge.

Our family goes through so many eggs weekly that we buy five dozen packs from the warehouse store. We just love ’em. They’re inexpensive and great for breakfast, lunch, dinner, and snacks. (We go through hard-boiled eggs by the dozen, and my latest trick has been to hard-cook 18 or so at a time in my pressure cooker!)

I stumbled across this weight loss study that compared eggs to carbs for breakfast. After reading the article, I’ve been trying to kick my morning cereal habit and eat more eggs. (Basically, the study says that after eight weeks of eating eggs vs. bagels, the egg-eating diet group had a 61% greater reduction in BMI, 65% more weight loss, 34% greater reduction in waist circumference, and 16% greater reduction in body fat.)

Ingredients And Tips For Microwave Omelette

  • Eggs: Use 2 to 3 eggs for a single serving.
  • Meat: I added about 1 Tbsp of diced meat. I used ham in today’s omelet, but I sometimes use a frozen turkey sausage.
  • Salsa: This omelette will work with any salsa, even green salsa, if that’s all you have.
  • Cheese: Use your favorite cheese, shredded.
  • Olive oil: Eggs are notorious for sticking; be sure to coat the mug with olive oil or use cooking spray.
  • Salt and pepper: Add salt and pepper to taste.

How To Make 2 Minute Omelette in a Mug

1 Prep your mug. Coat the mug with olive oil or cooking spray.

2 Add omelette ingredients to mug. Add eggs and whisk with a fork; then add meat, salsa, cheese, salt, and pepper. Whisk until all ingredients are thoroughly mixed together.

3 Microwave. Microwave on high for one minute.  Stir and break up any large chunks of egg. Cook for another 45 to 60 seconds or until eggs are set.

Recipe Tips

  • Watch the cooking time closely, as all microwaves are different. You don’t want to overcook the eggs and end up with a dry omelette.
  • Don’t forget to grease the mug, as eggs stick, which will be a pain to clean.
  • Cut the meat into small cubes so they disperse easily within the eggs.
  • Use finely grated cheese, so it melts well.

Storage

Leftover eggs will keep in the fridge for 3-4 days. Cover the mug with plastic wrap or aluminum foil, or transfer the leftovers to an airtight container.

To reheat, place back in the microwave until heated through.

Variations

  • Add chopped veggies to the mug: broccoli, spinach, mushrooms, peppers. Just about anything you have on hand will work.
  • Throw in some black beans. These go well with the salsa.
  • Change up the type of meat you add; diced ham, bacon, or sausage all work well. Even plant-based options will work.

Can I double the recipe?

If you want to make twice as much it is better to prepare the omelette twice. Twice the amount of ingredients in the mug may inhibit the eggs from cooking properly.

You can test the eggs with a knife or fork to see if they are very wet inside. If they are, cook for a few more seconds until the eggs are firm.

Can this be made ahead and frozen?

Definitely! Eggs freeze well. Just wrap them in plastic wrap and store them in an airtight container. Then, microwave them for about a minute to reheat.

Description

Ingredients

Scale
  • 2 to 3 eggs
  • 1 Tbsp of meat, diced (I used ham in today’s omelet, but I sometimes use a frozen turkey sausage link)

  • 1 Tbsp shredded cheese

Instructions

  1. Coat your mug with olive oil or cooking spray.
