Almond Joy Rice Krispie Treats

I’m not sure what I was thinking when I bought my kids a big box of Rice Krispies cereal last week…
I should have known better, this small, crunchy little cereal is not the best choice for small children who like to eat their cereal dry. Especially 2 small messy children, who sit side by side at a tall breakfast bar while eating this dry cereal.
For the last few days, every step I have taken all around my kitchen has “crunch, crunch” with a little crackling and popping as well… (and this is after sweeping!)
I tried to hide the cereal in the back of the pantry, but they kept dragging it out and asking for it. So to get rid of the cereal I figured I would just make something. After rummaging through my pantry, I came up with about 15 large marshmallows, coconut, chocolate chips, and almond extract.
The Almond Joy Rice Krispy Treats were born!
Yes, they taste almost like an Almond Joy, but in Rice Krispies form!

Chocolate, Almond and Coconut Rice Krispies
Description
The addition of sweetened coconut flakes, chocolate chips, and almond extract put these amazing Almond Joy Rice Krispie treats over the top!
Ingredients
- 3 tablespoons butter or margarine
- 1 package (10 oz., about 40) regular marshmallows or 4 cups miniature marshmallows
- 6 cups rice Krispies cereal
- 1 cup of sweetened shredded coconut
- 3/4 teaspoon of Almond extract
- a handful or 2 of milk chocolate chips
- optional: but think how good some chopped toasted almonds would be mixed in
Instructions
1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat and mix in the almond extract.
2. Add the rice Krispies and shredded coconut. Stir until well coated.
3. Using a buttered spatula or wax paper, evenly press the mixture into 13 x 9 x 2-inch pan coated with cooking spray.
4. Top with chocolate chips, pressing them into the rice Krispies.
5. Let cool. Cut into squares and enjoy!
