Puff Pancake with Fresh Berries & Strawberry Maple Sauce

We finally got to the Strawberry picking farm last week!
We’ve had such crazy weather this spring I was not sure we would be able to make it out and get any fruit this year.
We drove out super early last Saturday (first ones there ) and wore our boots so we could get to the muddiest areas and pick the last of the strawberries.
We definitely timed it perfectly as we were able to get plenty of strawberries, blackberries, peaches, onions, and even potatoes!
We’ve eaten most of the blackberries and potatoes (yummy pressure cooker low country shrimp boil and a farmer’s breakfast skillet) already, but I put a few handfuls of the blackberries aside for a couple of recipes I have planned. The first one being this puff pancake!

What is a Puff Pancake?
A puff pancake goes by a few different names. You might have heard it called a Dutch baby or German pancake. These 3 types of pancakes are actually all one and the same. A puff pancake is a deliciously large pancake baked in the oven.
It’s called puff pancake because as it bakes the center rises up like a balloon and once you pull it from the oven, it deflates, creating a perfect spot for all your syrup, whipped cream and toppings.

The batter comes together in just a few minutes and then you bake it in the oven.
So no more slaving over the stove making individual pancakes. (I also like to make oven-baked french toast this way.)
When the pancake comes out of the oven, the edges will be puffed up beautifully, just waiting to be topped with your favorite toppings.
Like Strawberry Maple Sauce.

Make the strawberry maple sauce by blending a cup of fresh strawberries, 2 tbsp of maple syrup, and 2 tsp of lemon juice. Strain if desired.
Puff Pancake Ingredients:

- Milk (make sure to use dairy milk)
- Eggs (large)
- Vanilla
- Sugar (granulated)
- Butter
- Flour (all-purpose)
- Berries of choice (I used strawberries and blackberries)
- Optional topping: more berries, whipped cream, strawberry maple syrup (recipe above.)
Cooking instructions:
- Preheat oven to 425°F.
- Warm milk in the microwave and whisk in eggs, vanilla, sugar, and butter.
- Add flour; mix until combined.
- Pour pancake mixture into greased 9-inch pie plate. Sprinkle half the strawberries and blackberries into the batter.
- Bake 25-35 minutes or until pancake edges have puffed up and the center is cooked through.
- Sprinkle remaining berries on top of pancake and top with strawberry maple sauce.

Tips for the Best Puff Pancake
- This recipe is easily doubled for two Puff Pancakes.
- Whisk your batter until it is fairly smooth; a few small lumps are OK.
- Do not skip preheating the oven, the pancake needs a very hot oven to puff up. (It is the steam from the milk and egg that make it puff up.)
- The Puff Pancake batter can be made the night before. Cover and refrigerate till morning, give the batter a quick whisk before adding to the prepared pan.

- 1 Tbsp sugar

- 3/4 c all purpose flour
- 3/4 c sliced strawberries, divided
- 1/2 c blackberries, divided
Strawberry Maple Sauce Ingredients
- 1 c fresh or thawed strawberries
- 3 Tbsp maple syrup
Instructions
