We have a very busy after school schedule this year. I have my son in an after school martial arts enrichment program again this year. (This is on top of scouts and sports for both kids.) His pick up time for the program is anytime between 5 and 6 o’clock.
While the program is great, the pick-up time has really thrown a wrench in my dinner prep routine- I’ve always started dinner around 5ish and had it on the table at around 6:00. Since I’m gone from the house during the time I normally prepare dinner, I’ve had to come up with a few new dinner ideas that I can get on the table in about 30 minutes.
Lately, we’ve been on a bit of a tortellini kick. (Probably has something to do with the fact I have a couple of huge bags of tortellini in the freezer, lol.)
This Three Cheese Tortellini Bake is a Cheese Lovers Dream!
Tortellini is something the kids will always eat and I love to find new ways to serve it. One of our family’s favorite meals is this Cheesy Tortellini Bake.
This oven-baked Tortellini Casserole is always a hit with the kids- even my picky eater! The casserole is made with three different kinds of cheeses, Ricotta, Mozzarella, and Parmesan then baked in the oven and becomes an ooey-gooey, cheesy baked tortellini delight.
Ingredients you’ll Need for 3 Cheese Baked Tortellini:
- 1 cup sliced mushrooms
- 1tsp minced garlic
- olive oil
- baby spinach torn into small pieces (optional)
- 1 24 oz jar of Pasta Sauce
- 1 large bag of frozen tortellini (20 or more oz)
- ricotta cheese
- shredded mozzarella
- Parmesan Cheese
How to Make the Tortellini Bake:
(Printable recipe card at the bottom of the post.) The instructions for this casserole include sauteing mushrooms and garlic in oil before adding the pasta sauce.
This extra step really makes the casserole so much better, but if you are in a rush, you can skip this step. Just make sure to use a premium, flavorful pasta sauce.
- Preheat oven to 400.
- Heat oil or butter in a large skillet over med-high heat. Saute mushrooms for 2 to 3 minutes. Add in garlic and saute another 3 minutes.
- Add pasta sauce to skillet and continue cooking until sauce is hot.
- Meanwhile, spread frozen tortellini in a large baking dish. Layer torn spinach over tortellini and spoon ricotta cheese on top.
- Spread pasta sauce over tortellini and cheese layer.
- Top pasta sauce with shredded mozzarella and parmesan.
- Bake for 30 minutes.
- Remove from oven and let stand for 5 minutes.
Can this Tortellini Bake Recipe be Made Ahead of Time?
Yes! If you are someone who loves to meal prep and makes a few dishes ahead of time for the week, this Three Cheese Tortellini Bake is a perfect recipe for a make-ahead meal.
Just put the casserole together, top with foil and store in the fridge for up to 3 days. When it’s time to cook the casserole, you will need to either pull it out of the fridge and allow it to get closer to room temp before baking or you will need to add about 20 minutes to the cooking time so the cheese can melt all the way through.
Can I use Fresh Tortellini in this Baked Tortellini Recipe
Yes, you can use fresh tortellini in this recipe. To do so, just follow the recipe as written and you can reduce the cooking time by about 5 to 10 minutes.

- 1 cup of shredded mozzarella
- 1/4 cup of Parmesan Cheese
