How to make Mac and cheese Pizza

Thanks to Horizon for partnering with me on this awesome Mac and Cheese Pizza recipe!

Mac and Cheese Pizza Recipe

When it comes to eating out, my kid’s favorite pizza is the Mac and Cheese pizza from Cici’s. Unfortunately for them, Hubby and I have been eating low-carb lately. So this means the kids have not had a trip to their favorite pizza buffet in about 6 months! (Poor little guys… Pizza is both of our downfalls, so no more buffets.) The only pizza we’ve been getting is the DIY kind.

For dinner (most nights) everyone eats the same protein and veggies, and then I usually prepare a separate side dish for the kids. (Pasta, mashed potatoes, mac and cheese, tortillas, fruit etc… you get the picture.)

Some nights though, Hubby and I will just eat salad and I make the kids a separate special meal.

Like Mac and Cheese Pizza!

On a recent trip to the grocery store, I came across these new microwavable Mac and Cheese cups from Horizon. They are exactly what I look for in quick and easy snacks or individual servings of my kid’s favorite foods.

When I saw these Mac and Cheese cups, I was inspired to create my own version of Cici’s Mac and Cheese Pizza as a special treat for my guys.

So while it might not have been Cici’s, the kids absolutely gobbled the pizza up and begged for more!  Plus, I know my version of Mac and Cheese Pizza is so much better for them. (and the smell of this pizza almost had me breaking my diet!)

Of course, you can use whatever type or recipe of mac and cheese you like when you make your pizza. This is a great recipe if you have leftover mac and cheese to use up.

  •  8 inch pre-baked (mini) pizza crust
  • 1 to 2 cups of mac and cheese | The creamier the better, if using leftover mac and cheese, you may wish to heat up your mac and cheese and add a bit of milk to make it creamier.
  • Shredded cheese | I used a white cheddar mozzarella blend.
  • Bacon crumbles | Optional topping, but makes the pizza even yummier.
  • Shredded Parmesan and Italian spice blend | Optional for garnish

Recipe tips

  • I know it may be tempting, but don’t overload your pizza crust with mac and cheese. it will cause the crust to be soggy and too heavy to pick up.
  • Make sure your mac and cheese is creamy, but not dripping with cheese sauce. If you think your mac and cheese seems dry, you can add a bit of milk. Extra cheese on top of the pizza helps with this as well.
  • I used a white cheddar mozzarella blend of cheese on my pizza, but you can use whatever type of cheese you prefer.
  • If you use a homemade pizza dough recipe, be sure to pre-bake it.
