Several nights a week the kids and I are away from home until well past 6:00 pm.  Considering bedtimes range between 7:30 and 8 pm, I really need to get dinner on the table fast and have been relying on a handful of our favorite quick and easy recipes.

 

I’ve been on a sauteed mushroom kick lately and have been adding them to almost every dish I’ve made in the last couple of weeks.   The mushrooms and sausage really come together deliciously in this creamy pasta dish and is a perfect example of a fast recipe that my family loves.  In just a few minutes more than the time it takes to cook the pasta, we have a hearty and filling family meal.  This is a sponsored conversation written by me on behalf of Ragu.

To save time in this recipe, I used the Ragu® Roasted Garlic Parmesan Sauce which is already packed with the flavors of garlic and parmesan cheese, so I did not have to spend additional time creating a white sauce from scratch or roasting garlic. (Plus, Ragu® is made with NO artificial flavors, colors or high fructose corn syrup.)  The Roasted Garlic Parmesan Sauce paired really well with the mushrooms, sausage and pasta, but I bet the Classic Alfredo Sauce would be just as tasty too!

Description

This Creamy Mushroom and Sausage Pasta is a quick and easy meal solution for those busy nights you need to have dinner on the table in 30 minutes or less!


Ingredients

Scale
  • 12 oz Farfalle/bow tie pasta
  • 2 tbsp butter
  • 2 cups button or baby bella mushrooms, sliced
  • 10 oz sausage, sliced
  • 1 cup Arugula (or spinach)
  • 4 slices bacon, cooked and diced
  • 1 Jar Ragu® Roasted Garlic Parmesan Sauce (Classic Alfredo would work too)

Instructions

  1. Boil water for pasta and follow pasta cooking instructions.
  2. Melt butter in pan, saute mushrooms about three minutes, over med-high heat.  Add sausage and continue sauteing until sausage begins to brown.
  3. Once pasta has finished cooking, drain and reserve about 1/2 cup of pasta water.
  4. Add pasta and Ragu® to pan and thoroughly combine.  Continue cooking over medium heat, until pasta sauce is heated through.
  5. Add arugula to pasta and cook for another minute or two, until arugula is wilted.
  6. If you need to thin out sauce, add reserved pasta water a tablespoon or two at a time and stir until desired consistency is reached.
  7. Top with bacon and serve.
