This air fryer chicken fajitas recipe is a perfect busy weeknight meal. The flavorful chicken and veggies cook up together in just a few minutes, so you get soft, tender chicken and nice crunchy veggies perfectly seasoned with fajita flavor.

I like serving these fajitas with chips, refried beans, and rice, family style, with lots of toppings. That way, everyone can make their fajitas their way. Some of our favorite fajita toppings are shredded cheddar cheese, salsa, guacamole, pico de gallo, sour cream, and fresh cilantro.

  • Chicken breasts One pound or about two large boneless skinless chicken breasts.
  • Peppers and Onions | You will need one red and one green bell pepper, but any colored peppers will work. I like yellow onions for this recipe; the flavor is milder and perfect for sauteing and air frying. You could also use white onion, but its flavor is a bit stronger.
  • Olive oil | Olive oil or any other oil (like avocado oil) will work.
  • Spices | Chili powder, ground cumin, garlic powder, paprika, salt, and ground black pepper. You could use your favorite homemade fajita seasoning mix or store-bought taco seasoning. You will need 2.5 to 3 tablespoons of taco seasoning.

  1. Prep: Preheat the air fryer to 400°F. Mix the spices together in a small bowl. Slice the chicken breast, bell peppers, and drizzle with oil.
  2. Add spices: Coat chicken and veggies with seasoning.
  3. Cook: Air fry for 7 minutes. Toss the fajitas by shaking the basket or using tongs. Cook for an additional 7 minutes or until the chicken is cooked through.
  4. Serve: Serve with flour or corn tortillas and your favorite fajita toppings.

Recipe Tips

  • If you have the time, let the chicken and veggies marinate with the seasoning. It doesn’t have to sit all day; even just for 30 minutes or so will enhance the flavor.
  • Buy precut fajita veggies at the grocery store and save yourself the hassle of cutting them up.
  • Cooking time may vary depending on your air fryer and how thick the chicken strips are cut. I always use my digital thermometer to ensure the meat is cooked to 165 F.
  • Make sure not to overcrowd the Air Fryer basket. The chicken needs to be in a single layer to have room to “air-fry.” Too much food in the basket will cause more of a “steaming” effect.

Variations

  • Switch up the seasonings: If you are short on spices, you can use a packet of taco seasoning to season the chicken and vegetables.
  • Make the fajitas vegetarian: using tofu sticks and/or portobello mushrooms instead of chicken. Add the tofu/mushrooms a few minutes into the cooking time; they typically need about 10 to 11 minutes to cook. The tofu is ready when it’s crisp and browned around the edges. Use firm or extra firm tofu.
  • Make beef fajitas: Use the same recipe with sliced skirt steak for beef fajitas. (The skirt seak will need about 5 to 10 minutes in the air fryer. Keep your eye on it and cook til done to your liking.)
  • Make it spicy: Toss in some chopped jalapeno or cayenne pepper.
  • Add lime: Squeeze some lime juice over the chicken and veggies after cooking.
  • Make it low-carb/keto: Use low-carb flour tortillas for a keto/low-carb version.

Storage

Store leftover chicken fajitas in an airtight container in the refrigerator for up to 3 days. To freeze, cool completely and freeze in a freezer bag for up to three months, thawing overnight in the fridge.

Leftovers are great in salads, quesadillas, or burrito bowls. To reheat leftovers, cook in the air fryer at 350 degrees for 3 to 5 minutes.

Can you use chicken thighs for this recipe?

Yes, boneless skinless chicken thighs are delicious in this Air Fryer Chicken fajita recipe. The thighs will take just a bit longer to cook. So make sure to slice them thin and evenly.

Does the chicken need to be sliced before cooking it?

It is better to slice the chicken so it cooks up quicker than if it was a whole chicken breast.

How Do You Know If The Chicken Is Cooked All the Way?

One way to test if the chicken is done is to cut into the middle of the chicken to see if it is pink inside. If it is pink, cook the chicken a bit longer.

The second method (and my preferred method, as I fear undercooked meat) is a meat thermometer. Grab a chicken strip with a pair of tongs and stick the probe into the middle of the chicken strip. Once it reads 165 F. The chicken is done.

Can this recipe be doubled?

Definitely, but you will need to air-fry the fajita mixture in batches.

Can I line my air fryer with foil for easy cleanup?

Yes, it is safe to line the air fryer with foil when cooking the fajitas. I do not recommend adding the foil when preheating; you need food in the air fryer to hold it down. I like to use silicone liners made for the air fryer for easy cleanup.

Can this recipe be made in the oven?

Yes, of course. Follow the recipe and bake the chicken for 20 to 25 minutes or until the chicken is done.

The chicken can also be cooked in a slow cooker or instant pot. You can add the veggies to the pot while cooking, or if you want crisper veggies, you will want to saute them in a separate frying pan. You could also add the breasts whole and shred the chicken with forks when the cooking time is complete.

Instructions

  1. Preheat the air fryer to 400°F.
  2. Mix chili powder, cumin, garlic powder, paprika, salt, and black pepper in a small bowl and set aside.
  3. Slice chicken breast, bell peppers, and onion into strips about ½  in thickness. Place the chicken and vegetable strips in a large bowl and drizzle with the olive oil. Toss the chicken and veggies until well coated in the oil.
