If you’re craving something simple, sweet and just a little indulgent, these No-Bake Mini Cheesecake Bites are exactly what you need. They only take a few minutes to put together, but they look much fancier than the amount of work involved!
I first made these after craving something sweet and failing to convince the hubby to go pick up dessert. After rummaging through the refrigerator and freezer, I came up with strawberries, cream cheese, Cool Whip, and a couple of boxes of mini phyllo shells. I figured I could wing it—and these little strawberry cheesecake bites definitely did the trick.
I topped mine with fresh strawberries, but you can easily switch up the topping depending on what you have on hand. Other berries, jam, fruit curd, or a little chocolate or caramel drizzle would all be delicious.
I love mini desserts because they’re cute, easy to serve, and perfect for parties. They’re also great for portion control. Of course, that only works if you stop after one or two, lol!
Made with reduced-fat cream cheese and Cool Whip Lite, each mini cheesecake is right around 50 calories. They’re sweet, creamy, and rich enough to satisfy that cheesecake craving without committing to a full slice.

- Strawberries | Use fresh strawberries only. I do not recommend frozen strawberries for this recipe. If you don’t have strawberries on hand, any fruit will do. Just chop the fruit into small pieces and mix with sugar. If you think the fruit is sweet enough, don’t add the sugar.
- Sugar | Sugar sweetens the cheesecake filling and helps the chopped strawberries release their juices.
- Reduced-fat cream cheese | Reduced-fat or full-fat cream cheese will work. Avoid fat-free cream cheese, which can affect the flavor and consistency. Let it soften to room temperature so the filling blends smoothly.
- Vanilla | Use the best vanilla extract you can find. I do not recommend imitation vanilla, but if you can find clear vanilla extract, your cream cheese will be brighter.
- Cool Whip| I used Cool Whip Lite for this recipe, but you can use the regular Cool Whip. Or if you happen to have whipping cream on hand, you can whip it up until stiff peaks form and use it instead.
- Mini Fillo Shells | These small, crisp pastry shells are sold prebaked and ready to use. You may also see them labeled as mini fillo shells.

How to make no bake mini cheesecake Bites
1 Chop the strawberries and mix in 1/8 cup of sugar. Set aside in the refrigerator.

2 Beat the cream cheese, sugar, and vanilla together using a hand mixer or stand mixer, and then fold in the Cool Whip.

3 Using two spoons, add 1 to 2 tablespoons of the cream cheese mixture to the fillo shells.

4 Chill in the fridge for about an hour.
5 Top the cheesecake batter with the strawberry mixture right before serving.

Recipe Tips For No-Bake Strawberry Cheesecake
- Let the cream cheese soften before mixing. Cold cream cheese can leave small lumps in the filling.
- Beat the cream cheese, sugar, and vanilla before adding the Cool Whip.
- Fold in the Cool Whip gently to keep the filling light and fluffy.
- Wait to add the strawberries until just before serving. The longer the juicy topping sits on the phyllo shells, the softer the shells will become.
- If the strawberries produce a lot of liquid, use a slotted spoon or let the excess juice drain off before topping the cheesecake bites.

- Lemon curd

Make-Ahead Instructions
The cheesecake filling can be prepared up to one day in advance. Store it in an airtight container in the refrigerator, then fill the phyllo shells before serving.
You can also chop the strawberries ahead of time, but store them separately from the cheesecake filling and phyllo shells.
For the crispest shells, assemble the cheesecake bites no more than an hour or two before serving. Add the strawberries at the last minute.

Can I Use A Different Crust For These Mini Cheesecake Bites?
Of course! You can use whatever kind of crust you like. I like using these mini fillo cups as they are ready to go, so there’s no additional preparation required on my part. But, you can also do a graham cracker crust, pressed into a cupcake liner in a muffin tin, or buy premade mini graham cracker crusts (like I used in these mini pudding pies.) You could also cut puff pastry or pie crusts into squares and bake them in a cupcake tin to use.
Can Mini Cheesecakes Be Frozen?
These mini cheesecake bites can be frozen or stored in an airtight container in the fridge. Once topped with the strawberry mixture, they will only last a day or so in the fridge.

Instructions
- Combine the chopped strawberries with 2 tablespoons of sugar. Cover and refrigerate while preparing the cheesecake filling.
- Add the softened cream cheese, 1/3 cup sugar, and vanilla to a mixing bowl. Beat with an electric mixer until smooth and creamy.
- Gently fold in the Cool Whip until evenly combined.
- Spoon or pipe the cheesecake filling into the mini phyllo shells, dividing it evenly between the 30 shells
- Refrigerate the filled shells for about one hour.
